Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat, stirring frequently until milk solids turn golden brown and it smells nutty (5-7 minutes). Pour into a heat-proof bowl and cool for 10-15 minutes until just warm.
  2. Cream the sugars and butter: In a large mixing bowl, combine cooled brown butter, granulated sugar, and brown sugar. Beat on medium speed until light and fluffy.
  3. Add wet ingredients: Mix in pumpkin puree, eggs, and vanilla extract on low speed until just combined.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, cream of tartar, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Make the dough: Gradually add dry ingredients to wet ingredients and mix on low speed until a thick, slightly sticky dough forms.
