Instructions

  1. Preheat oven to 425°F (220°C) and let it fully preheat for at least 15 minutes.
  2. Rinse Brussels sprouts and pat them completely dry with a towel to ensure crispiness.
  3. Trim the woody stem ends and halve the sprouts from top to bottom.
  4. Place sprouts in a large bowl, drizzle with olive oil, and sprinkle with salt and pepper. Toss thoroughly to coat evenly.
  5. Line a large baking sheet with parchment paper. Arrange sprouts in a single layer with cut sides facing down, ensuring they are not overcrowded.
  6. Roast for 20-25 minutes, flipping halfway through, until shriveled, golden brown, and charred at the edges.
  7. While roasting, whisk balsamic vinegar and honey together in a small bowl. For a thicker glaze, simmer vinegar separately for 5 minutes before mixing.
  8. Remove sprouts from oven and transfer to a serving platter.
  9. Drizzle the balsamic mixture over the hot sprouts and toss gently to coat. Serve immediately.

Notes

Ensure sprouts are completely dry before roasting to prevent steaming. Do not overcrowd the pan; use two sheets if necessary. High heat is essential for crispiness. If adding bacon, add it after roasting to prevent burning.
