Instructions

  1. Wash the cauliflower and trim it into bite-sized florets. Pat them completely dry with paper towels to ensure the batter adheres properly.
  2. In a medium bowl, whisk together the buttermilk, beaten egg, and a pinch of salt until smooth.
  3. In a separate large bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Whisk to distribute spices evenly.
  4. Dip a dried cauliflower floret into the wet batter, letting excess drip off, then coat it thoroughly in the dry flour mixture. Press the flour gently to help it stick.
  5. Place the coated florets on a wire rack or plate and let them rest for 5 minutes to allow the batter to hydrate.
  6. Preheat the air fryer to 400°F (200°C).
  7. Lightly spray the air fryer basket with oil. Arrange florets in a single layer without overcrowding.
  8. Air fry for 15-18 minutes, flipping halfway through. Spray the florets lightly with oil again at the halfway mark.
  9. While cauliflower cooks, melt the butter and stir in the buffalo sauce until smooth.
  10. Transfer the hot, crispy cauliflower to a large bowl and toss gently with the buffalo sauce mixture until evenly coated. Serve immediately.

Notes

Ensure cauliflower is completely dry before coating to prevent soggy batter. Do not overcrowd the air fryer basket; cook in batches if necessary. Toss in sauce immediately after cooking for best adherence. If using a conventional oven, bake at 425°F for 20-25 minutes, flipping halfway.
