  • 2 boneless, skinless chicken breasts
  • Buffalo sauce (e.g., Frank’s RedHot)
  • Panko breadcrumbs
  • Shredded sharp cheddar cheese
  • Unsalted butter, melted
  • Garlic powder
  • Onion powder
  • Celery salt
  • Salt (for seasoning potato interior)
  • Green onions, chopped (optional garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and pierce them 6-8 times with a fork. Bake for 45-60 minutes until soft.
  2. While potatoes bake, boil chicken breasts in water for 12-15 minutes until cooked through. Drain, cool, and shred the chicken.
  3. In a medium bowl, combine shredded chicken, buffalo sauce, garlic powder, onion powder, and celery salt. Toss to coat.
  4. In a separate small bowl, mix panko breadcrumbs with melted butter until evenly coated.
  5. Remove baked potatoes from oven and let cool for 5 minutes. Slice in half lengthwise.
  6. Fluff the inside of the potato halves with a fork, leaving a border around the edges. Sprinkle salt inside.
  7. Spoon the buffalo chicken mixture into each potato half. Top generously with shredded cheddar cheese.
  8. Sprinkle the buttered panko mixture over the cheese, pressing lightly to adhere.
  9. Bake for 10-15 minutes until cheese is bubbly and panko is golden brown.
  10. Let sit for 2 minutes before serving. Garnish with green onions if desired.

Notes

Ensure panko is coated in butter to achieve crispiness. Do not overfill potatoes to allow heat penetration. For leftovers, reheat in an air fryer or toaster oven to restore crunch. Can be frozen assembled but unbaked.
