A quick and easy 3-ingredient snack featuring plain popcorn coated in white chocolate and topped with festive candy corn. This no-bake treat is perfect for parties, Halloween, or a sweet Tuesday afternoon slump.

  • 6 to 8 cups plain, air-popped popcorn (no butter, salt, or oil)
  • 1 bag (approx. 12-16 oz) white chocolate chips (Ghirardelli or Nestle Toll House recommended)
  • 1 cup candy corn
  • Optional: Small handful of extra white chocolate chips for topping
  • Optional: 1 teaspoon coconut oil or vegetable shortening (if chocolate is too thick)

Instructions

  1. Line a standard 9×13 inch baking sheet with parchment paper or a silicone mat and set aside.
  2. Place white chocolate chips in a large microwave-safe bowl. Microwave on high for 30 seconds, then stir. Repeat in 15-second intervals, stirring after each, until mostly melted. Use residual heat to finish melting.
  3. Add the plain popcorn to the melted chocolate. Gently fold with a silicone spatula until every piece is coated, being careful not to crush the popcorn.
  4. Pour the coated popcorn onto the prepared baking sheet. Spread into an even, single layer. Scrape any remaining chocolate over the top.
  5. Immediately sprinkle candy corn over the wet chocolate and press down gently to adhere.
  6. Refrigerate for at least 30 minutes, or until the chocolate is completely hard.
  7. Remove from the fridge and break the bark into irregular pieces by hand. Do not cut with a knife.
  8. Store in an airtight container at room temperature.

Notes

If the chocolate seems too thick, add a teaspoon of coconut oil or vegetable shortening to thin it out. Ensure the popcorn is fresh to maintain crunch. Do not refrigerate after the initial set to prevent condensation from making the candy corn sticky. The flavors meld nicely after a day, making it taste better on day two.
