  • 10 ounces (about 3 cups) marshmallows
  • 6 cups (approx. 170 grams) Rice Krispies cereal
  • 1 cup (approx. 100 grams) candy corn
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease with butter or non-stick spray.
  2. In a large saucepan, melt the butter over medium-low heat until fully liquid and foamy, ensuring it does not brown.
  3. Add the marshmallows to the melted butter and stir constantly over low heat until they form a smooth, glossy pool.
  4. Remove the pan from the heat and stir in the vanilla extract and pinch of salt; residual heat will finish melting any remaining marshmallows.
  5. Add the Rice Krispies cereal and candy corn to the marshmallow mixture and gently fold until evenly coated, being careful not to crush the cereal.
  6. Transfer the mixture to the prepared pan and press down firmly using a buttered spatula or hands to pack it tight.
  7. Let the treats cool at room temperature for at least 30 minutes until completely set.
  8. Cut into squares using a sharp knife, wiping the blade between cuts for clean edges, and serve.

Notes

Keep heat low when melting marshmallows to prevent burning or crystallization. Work quickly once off the heat as the mixture thickens. Butter your hands if the mixture is too sticky to press into the pan. For clean cuts, use a sharp knife and wipe it between slices. Treats can be stored in an airtight container at room temperature for up to a week or frozen for up to three months.
