These crispy-chewy sugar cookie bars are infused with candy corn for a nostalgic fall treat. They are quick to make, use simple pantry ingredients, and offer a perfect balance of crisp edges and a tender center.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 2 large egg yolks
  • 2 teaspoons pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups candy corn

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, combine softened butter and granulated sugar. Beat on medium speed for 3-4 minutes until pale and fluffy.
  3. Add egg yolks and vanilla extract to the butter mixture. Beat on low speed until just combined, scraping down the sides of the bowl.
  4. In a separate medium bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients. Mix on low speed until just incorporated; do not overmix.
  6. Gently fold in candy corn using a rubber spatula, being careful not to crush the pieces.
  7. Spread the dough evenly into the prepared baking dish, pressing down firmly to create an even layer.
  8. Bake for 18-20 minutes, or until edges are lightly golden brown and the center looks slightly soft.
  9. Remove from oven and let cool in the pan for at least 30 minutes before lifting out and slicing into squares.

Notes

Ensure butter is at room temperature for proper creaming. Do not overmix the dough to avoid tough bars. Let bars cool completely before cutting for clean slices. Can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
