  • 1 package puff pastry sheets (thawed)
  • 8 oz Brie cheese (rind on or off, cut into 1-inch cubes)
  • 1 cup cranberry sauce (whole berry recommended)
  • 1 large egg (for egg wash)
  • 1 tablespoon water or milk
  • Pinch of salt
  • Optional: Fresh thyme or rosemary, finely chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheets to about 1/8 inch thick.
  3. Cut the pastry into 3-inch squares, yielding about 12-16 squares per sheet.
  4. Place a 1-inch cube of brie cheese in the center of each pastry square.
  5. Add a 1/2 teaspoon dollop of cranberry sauce on top of the cheese.
  6. Fold the pastry over the filling to create a triangle or square packet, pressing edges firmly with fingers or a fork to seal.
  7. Whisk the egg with water and lightly brush the top of each bite with the egg wash.
  8. Bake for 12-15 minutes, rotating pans halfway through, until puffed and deep golden brown.
  9. Cool on the baking sheet for 2-3 minutes before serving warm.

Notes

Keep the puff pastry cold to ensure flakiness. Do not overfill the bites to prevent leaking. For make-ahead prep, assemble and freeze before baking, then add 2-3 minutes to cook time when baking from frozen.
