An elegant yet easy appetizer featuring a crispy refrigerated dough base topped with tangy goat cheese, sweet figs, salty prosciutto, and a drizzle of honey. Perfect for busy weeknights or entertaining guests.

  • 1 (13-ounce) ball refrigerated pizza dough
  • All-purpose flour (for dusting)
  • 4 ounces soft goat cheese (chèvre)
  • Thinly sliced prosciutto di Parma
  • Dried Mission figs (chopped into quarters) or fresh figs (sliced into wedges)
  • Good quality wildflower or clover honey
  • Fresh thyme leaves
  • Freshly cracked black pepper
  • Balsamic glaze (optional)

Instructions

  1. Preheat oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat up.
  2. Remove dough from package and let sit at room temperature for 10-15 minutes to make it pliable.
  3. Lightly flour a countertop and roll the dough into a rough rectangle or circle, about 1/4 inch thick.
  4. Transfer the dough to a piece of parchment paper.
  5. Crumble goat cheese over the dough, leaving a small border around the edges.
  6. Scatter chopped dried figs or sliced fresh figs evenly over the cheese.
  7. Sprinkle fresh thyme leaves and a generous amount of cracked black pepper over the top.
  8. Slide the parchment paper onto a baking sheet and bake for 12-15 minutes until the crust is golden and cheese is bubbly.
  9. In the last 2-3 minutes of baking, tear prosciutto slices and scatter them over the flatbread to crisp up.
  10. Remove from oven and immediately drizzle with honey and balsamic glaze (if using).
  11. Let cool for 2 minutes before slicing and serving warm.

Notes

If using fresh figs, pat them dry with a paper towel to prevent a soggy crust. Tear the prosciutto instead of cutting it to ensure it gets crispy. For a vegetarian version, substitute prosciutto with caramelized onions or roasted mushrooms.
