A quick and easy 15-minute dinner featuring crispy-skinned salmon fillets coated in a sticky, sweet-savory honey and lemon butter glaze. Perfect for busy weeknights or solo dinners.

  • 4 skin-on salmon fillets (about 6 ounces each)
  • 3 tablespoons unsalted butter, divided
  • 3 tablespoons raw honey
  • 2 tablespoons fresh lemon juice
  • Zest of 1 medium lemon
  • 1 clove garlic, minced finely
  • 1 teaspoon soy sauce
  • Freshly cracked black pepper
  • Sea salt, to taste
  • 1 tablespoon neutral oil (e.g., avocado or grapeseed oil)

Instructions

  1. Remove salmon fillets from the fridge 10-15 minutes before cooking to bring to room temperature.
  2. Pat salmon fillets thoroughly dry with paper towels and season both sides with salt and pepper.
  3. In a small saucepan over low heat, combine honey, 2 tablespoons of butter, soy sauce, minced garlic, and lemon zest. Stir until butter melts and mixture is smooth. Remove from heat and stir in fresh lemon juice.
  4. Heat a large skillet (preferably cast-iron or stainless steel) over medium-high heat. Add neutral oil and swirl to coat.
  5. Once oil shimmers, place salmon fillets in the pan skin-side down. Press gently for 10 seconds to prevent curling.
  6. Cook undisturbed for 4-5 minutes until skin is crispy and color changes halfway up the side of the fillet.
  7. Spoon some of the honey glaze over the top of the fillets while cooking.
  8. Flip fillets carefully. Reduce heat to medium.
  9. Cook for another 3-4 minutes, basting with the remaining 1 tablespoon of melted butter and pan juices.
  10. Salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  11. Transfer to plates and pour remaining glaze and brown butter over the top. Serve immediately.

Notes

Ensure salmon is completely dry before cooking for crispy skin. Do not move the salmon for the first few minutes to allow the skin to release naturally. If using farm-raised salmon, pat it extra dry. For a spicy variation, add red pepper flakes to the glaze.
