A spooky and delicious Halloween appetizer featuring a wheel of brie wrapped in flaky puff pastry, baked until golden, and served with fig jam.

  • 12 sheets frozen puff pastry (thawed)
  • 1 wheel of brie (approx. 8 oz)
  • 1 large egg beaten with 1 tablespoon water (for egg wash)
  • 1 tablespoon melted butter
  • Black olives or pretzel pieces (for eyes)
  • Fig jam or cranberry sauce (for serving)

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Thaw puff pastry according to package directions; keep cold until ready to use.
  3. Roll out pastry on a lightly floured surface into a rectangle about 1/8 inch thick.
  4. Place brie wheel in the center of the pastry and wrap edges around the cheese, overlapping slightly at the bottom. Trim excess pastry and press edges to seal.
  5. Cut two small circles in the top of the pastry for eyes, being careful not to cut through to the cheese.
  6. Place sliced black olives or pretzel pieces into the eye holes.
  7. Brush the pastry with melted butter, then brush with the egg wash.
  8. Bake for 15-20 minutes until pastry is puffed and golden brown.
  9. Cool for 5 minutes before serving warm with fig jam or cranberry sauce.

Notes

Ensure the oven is fully preheated for proper puff pastry rise. Work quickly with the pastry to keep it cold. If the pastry gets too soft, chill it for 10 minutes. Leftovers can be stored in the refrigerator for up to two days and reheated in the oven at 350°F.
