Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour
  • ½ cup (45g) unsweetened natural cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¼ cup (60ml) vegetable oil
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) buttermilk
  • Red gel food coloring paste
  • ½ cup (100g) extra granulated sugar for coating

Instructions

  1. Preheat oven to 350°F (175°C) and line two large baking sheets with silicone mats or parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt; set aside.
  3. In a large bowl, beat softened butter, vegetable oil, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  4. Beat in eggs one at a time, then add vanilla extract and mix until combined.
  5. Gradually add dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with dry ingredients. Mix on low speed until just combined.
  6. Add red gel food coloring and mix until the dough is a vibrant crimson color.
  7. Cover and refrigerate dough for at least 30 minutes.
  8. Scoop about 1 tablespoon of dough, roll into a ball, and coat thoroughly in extra granulated sugar.
  9. Place cookies on prepared baking sheets, leaving 2 inches of space between each.
  10. Bake for 10-12 minutes until edges are set but centers remain slightly soft.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chilling the dough is crucial to prevent spreading and ensure the crinkle effect. Use gel food coloring instead of liquid to maintain dough consistency. Do not overmix the dough to avoid tough cookies. Cookies can be frozen before or after baking.
