Transform leftover turkey into crispy, flaky hand pies using store-bought puff pastry, sharp cheddar, and stuffing crumbs for a quick and delicious meal.

  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1.5 cups leftover turkey, diced
  • 4 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup stuffing crumbs, crushed
  • 2 tablespoons heavy cream
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 2 sheets puff pastry, thawed
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Sesame seeds or poppy seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a medium sauté pan over medium heat, melt butter. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine cream cheese, shredded cheddar, heavy cream, Dijon mustard, salt, and pepper. Mix until smooth. Add the cooled onion/garlic mixture, diced turkey, and stuffing crumbs. Stir until well combined. Chill filling in the fridge for 15 minutes.
  4. On a lightly floured surface, roll out one sheet of puff pastry to 1/8 inch thickness. Cut into 4-inch squares (approx. 4-6 per sheet).
  5. Place 2-3 tablespoons of filling in the center of each pastry square. Leave a 1/2-inch border. Brush edges with water. Fold pastry over filling to seal (triangle or rectangle). Crimp edges with fingers or a fork. Cut 2-3 small slits in the top for steam vents.
  6. Brush tops with egg wash and sprinkle with seeds if using. Bake for 20-25 minutes until puffed and golden brown, rotating sheet halfway through.
  7. Cool on a wire rack for at least 10 minutes before serving warm with gravy or cranberry sauce.

Notes

Keep puff pastry cold to ensure flakiness. Do not overfill the pies to prevent bursting. Ensure the filling is thick; if too wet, add more stuffing crumbs. Can be frozen unbaked and baked from frozen, adding 5-10 minutes to cook time.
