  • 1/2 cup packed fresh dill
  • 1/4 cup chopped fresh chives
  • 1 cup plain non-fat or low-fat Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced or pressed
  • Salt and pepper to taste
  • 2 heads broccoli, cut into bite-sized florets
  • 1 large head cauliflower, cut into bite-sized florets
  • 3 large carrots, peeled and cut into sticks or rounds
  • 2 medium cucumbers, sliced into rounds or half-moons
  • 1 pint cherry tomatoes
  • 1 cup green grapes, halved
  • 1 head romaine lettuce, leaves torn

Instructions

  1. Wash all produce thoroughly and pat dry with paper towels.
  2. Cut broccoli and cauliflower into uniform, bite-sized florets.
  3. Slice carrots and cucumbers into sticks or rounds.
  4. Tear romaine lettuce into large pieces.
  5. Line a large serving platter with romaine lettuce leaves.
  6. Arrange broccoli and cauliflower in clusters to resemble monsters or trees.
  7. Place carrots and cucumbers around the edges of the tray.
  8. In a food processor, combine parsley, dill, chives, Greek yogurt, mayonnaise, lemon juice, garlic, salt, and pepper.
  9. Pulse until the mixture is smooth and herbs are finely chopped.
  10. Use cherry tomatoes as eyes for the broccoli monsters, securing with toothpicks if necessary.
  11. Arrange halved green grapes strategically on the tray.
  12. Place the dip in a bowl in the center or in small individual bowls.
  13. Garnish dip with fresh parsley or chives and serve immediately.

Notes

For a vegan option, swap Greek yogurt and mayo for vegan alternatives. If making ahead, keep dip and veggies separate until an hour before serving to prevent wilting. Let the dip sit in the fridge for 30 minutes before serving to allow flavors to meld. Store leftovers in an airtight container in the fridge for up to 3 days.
