  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Kosher Salt
  • ½ cup Pumpkin Puree
  • ½ cup Light Brown Sugar, packed
  • ¼ cup Unsalted Butter, melted and slightly cooled
  • 1 Large Egg, room temperature
  • 1 teaspoon Pure Vanilla Extract
  • 1 ½ teaspoons Pumpkin Pie Spice
  • ½ cup Granulated Sugar (for coating)
  • 1 teaspoon Cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a donut pan with butter or non-stick spray.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  3. In a large bowl, whisk melted butter, brown sugar, and egg until smooth. Whisk in pumpkin puree and vanilla extract.
  4. Pour dry ingredients into wet ingredients. Gently fold together with a spatula until just combined; do not overmix.
  5. Spoon batter into prepared donut cavities, filling each 2/3 to 3/4 full.
  6. Bake for 10-12 minutes, or until a toothpick inserted comes out clean and donuts spring back when touched.
  7. Let donuts cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  8. Mix granulated sugar and cinnamon in a small bowl. Lightly brush cooled donuts with melted butter and roll tops in the cinnamon sugar mixture to coat.

Notes

Ensure baking powder is fresh for proper rising. Do not overmix the batter to avoid tough donuts. Cool donuts completely before coating to prevent sugar from melting. For gluten-free, use a 1-to-1 gluten-free flour blend. For vegan, substitute butter with oil and use maple syrup for coating.
