Easy Christmas Cake Pops with Crushed Candy Cane

Festive holiday treats made by mixing crushed candy canes into vanilla cake crumbs and frosting, then dipping them in red-tinted white chocolate for a minty, crunchy delight.

Ingredients

  • 1 box (15.25 oz / 432g) vanilla cake mix
  • 1 jar (16 oz / 450g) cream cheese frosting
  • 1012 large peppermint candy canes (approx. 2 cups crushed)
  • 1 bag (12 oz / 340g) white chocolate melting wafers
  • Gel-based red food coloring
  • Extra crushed candy canes for garnish
  • Edible glitter (optional)
  • Vegetable oil (optional, for thinning chocolate)

Instructions

  1. Preheat oven to 350°F (175°C). Bake vanilla cake mix according to package directions in a 9×13 inch pan. Do not overbake; let cool completely.
  2. Crumble the completely cooled cake into fine crumbs in a large bowl.
  3. Place candy canes in a heavy-duty Ziplock bag and crush into small pieces and dust using a rolling pin.
  4. Mix the crushed candy canes into the cake crumbs.
  5. Gradually add cream cheese frosting to the crumb mixture until it holds together like damp sand.
  6. Scoop mixture and roll into 1.5-inch uniform balls. Place on a parchment-lined baking sheet.
  7. Freeze the cake balls for at least 30 minutes.
  8. Melt white chocolate melts in a microwave-safe bowl in 30-second intervals, stirring until smooth. Add a drop of vegetable oil if too thick.
  9. Mix a tiny amount of gel red food coloring into the melted chocolate.
  10. Dip the end of a popsicle stick into chocolate and insert into a chilled cake ball. Dip the entire ball into the red chocolate, coating evenly.
  11. Immediately sprinkle crushed candy canes onto the wet chocolate.
  12. Place pops upright in a styrofoam block or stand to set for 15-20 minutes at room temperature or 10 minutes in the fridge.

Notes

Ensure cake is completely cool before crumbling to prevent mushiness. Chill cake balls thoroughly before dipping to ensure chocolate sets properly. Do not use liquid food coloring as it can cause chocolate to seize. Store in an airtight container at room temperature for up to 5 days.
