A homemade version of the popular Starbucks drink featuring a rich cold brew base topped with a light, airy pumpkin spice cream foam. This recipe uses simple ingredients to create a velvety, spiced beverage perfect for fall.

  • 1 cup cold brew concentrate
  • 1 to 1.5 cups ice
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 2 tablespoons 100% pure pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 tablespoons whole milk
  • 1 tablespoon powdered sugar
  • 1/4 teaspoon pumpkin spice
  • Pumpkin spice dusting (optional)
  • Caramel drizzle (optional)

Instructions

  1. In a small saucepan, combine water, sugar, pumpkin puree, pumpkin pie spice, and vanilla extract. Whisk over medium heat until sugar dissolves and mixture simmers gently for 2-3 minutes. Remove from heat and let cool completely.
  2. In a small bowl, combine heavy cream, whole milk, powdered sugar, and pumpkin spice. Whip with a handheld frother or blender until light and pourable (soft peaks). Do not over-whip.
  3. Fill a tall glass with ice. Pour in the cold brew concentrate, leaving about an inch of space at the top.
  4. Slowly pour the pumpkin cream foam over the back of a spoon onto the coffee to create layers.
  5. Dust the top with extra pumpkin spice and serve immediately.

Notes

Ensure heavy cream is very cold before whipping for best results. Use 100% pure pumpkin puree, not pumpkin pie filling. The foam should be light and pourable, not stiff. Syrup can be stored in the fridge for up to a week.
