These creamy pumpkin bars feature a buttery crust, a rich custard-like filling, and a crunchy maple pecan topping. They are an easy, crowd-pleasing fall dessert that balances sweet maple notes with warm spices.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon ground cinnamon
  • 15 oz canned pumpkin puree
  • 14 oz can condensed milk
  • 2 large eggs, room temperature
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ cup pure maple syrup
  • ½ cup brown sugar
  • ¼ cup unsalted butter, melted
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13 inch baking dish with parchment paper.
  2. In a medium bowl, mix flour, sugar, cinnamon, and softened butter until it resembles coarse crumbs. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes to prevent a soggy bottom, then remove from oven.
  4. While the crust bakes, whisk together pumpkin puree, condensed milk, eggs, pumpkin pie spice, and vanilla extract in a large bowl until smooth.
  5. Pour the pumpkin filling over the hot pre-baked crust and spread evenly.
  6. Return to the oven and bake for 25-30 minutes until edges are set but the center has a slight jiggle.
  7. While bars bake, mix maple syrup, brown sugar, melted butter, and chopped pecans in a small bowl.
  8. Remove bars from oven and spoon the maple pecan mixture evenly over the hot filling.
  9. Return to oven for another 10-15 minutes until topping is bubbly and slightly caramelized.
  10. Cool completely in the pan (1-2 hours) before cutting into squares. Drizzle with extra maple syrup if desired.

Notes

Use real maple syrup, not pancake syrup. Toast pecans lightly for extra flavor. Ensure eggs are at room temperature to prevent curdling. Do not overbake to avoid cracking. Bars taste better after sitting in the fridge for a few hours.
