  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a 13×18 inch rimmed baking sheet with parchment paper.
  2. Roll out the puff pastry or pie crust on a lightly floured surface to about 1/8 inch thickness. Cut into 1-inch wide strips (yielding 8-10 strips per sheet).
  3. In a mixing bowl, toss the diced apples with granulated sugar, cinnamon, nutmeg, lemon juice, and vanilla extract. Let sit for a few minutes.
  4. Place a strip of dough on a counter. Spoon a generous amount of apple mixture into the center, leaving an inch of space on each end.
  5. Roll the dough over the filling to create a packet and crimp edges tightly with a fork to seal.
  6. Cut additional strips of dough to use as ‘bandages.’ Lay them across the sealed hand pies, pressing ends gently to secure. Leave some gaps for a rustic look.
  7. Place assembled hand pies on the prepared baking sheet, ensuring space between them for expansion.
  8. Brush the tops generously with melted butter.
  9. Bake for 20-25 minutes until the pastry is golden brown and puffed up.
  10. Cool on the baking sheet for at least 10 minutes before serving. Dust with powdered sugar if desired.

Notes

Keep the dough cold to ensure flakiness. If the apple filling is too wet, add a tablespoon of flour or cornstarch to thicken it. Do not overcrowd the baking sheet. For a gluten-free option, use gluten-free puff pastry. For dairy-free, use vegan butter and pastry.
