Individual portions of savory sausage and sweet cornbread stuffing baked in a muffin tin for a stress-free, crowd-pleasing holiday side dish with crispy edges and a soft center.

  • 1 large pan of cornbread, crumbled into small pieces
  • 1 pound pork breakfast sausage
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, finely diced
  • 2 large eggs, beaten
  • 1 to 1.5 cups low-sodium chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Optional: 1/2 cup dried cranberries or 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with butter or cooking spray.
  2. Heat a large skillet over medium heat and cook the sausage, breaking it up with a spoon, until browned (8-10 minutes). Drain excess grease if necessary and transfer to a large mixing bowl.
  3. In the same skillet, melt butter and sauté the diced onion and celery until softened (about 5 minutes). Add garlic in the last minute of cooking. Transfer vegetables to the bowl with the sausage.
  4. Crumble the cornbread into the large mixing bowl with the sausage and vegetables.
  5. Add the beaten eggs, fresh herbs, salt, and pepper to the bowl. Pour in 1 cup of chicken broth and mix gently until evenly moistened. Add remaining broth gradually if the mixture appears dry.
  6. Divide the mixture evenly among the 12 muffin cups, pressing down firmly to pack it tight. Leave about 1/4 inch of space at the top.
  7. Bake for 20-25 minutes until tops are golden brown and crispy. Check doneness with a toothpick.
  8. Let muffins cool in the pan for 5 minutes to set before loosening edges and serving warm.

Notes

If using fresh cornbread, toast the crumbles in the oven for 5 minutes before mixing to ensure proper texture. Pack the mixture tightly into the muffin cups to prevent falling apart. Let cool for 5 minutes before removing from the tin.
