A comforting, one-pan meal featuring crispy skin-on chicken thighs roasted with sweet apples, earthy butternut squash, and a tangy maple glaze. Perfect for busy weeknights and capturing the essence of autumn.

  • 46 boneless, skin-on chicken thighs
  • 1 large butternut squash, peeled and cubed into 1-inch pieces
  • 2 firm apples (like Honeycrisp or Fuji), cored and sliced into wedges
  • 1 red onion, cut into large wedges
  • 3 tbsp extra virgin olive oil, divided
  • 1 tbsp Dijon mustard
  • 1 tsp dried sage, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 2 tbsp pure maple syrup (Grade A Dark Amber)
  • 2 tbsp apple cider

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, toss the cubed squash, apple wedges, and red onion wedges with 1.5 tbsp olive oil, 1/2 tsp dried sage, salt, and pepper until evenly coated.
  3. Spread the vegetables on one half of a large rimmed baking sheet.
  4. In the same bowl, toss the chicken thighs with the remaining 1.5 tbsp olive oil, Dijon mustard, garlic powder, onion powder, remaining 1/2 tsp dried sage, salt, and pepper.
  5. Place the chicken on the other half of the baking sheet, ensuring pieces are spaced apart.
  6. Roast in the preheated oven for 20 minutes.
  7. While the chicken roasts, whisk together the maple syrup and apple cider in a small bowl to create the glaze.
  8. Remove the pan from the oven. Brush the chicken thighs generously with half of the glaze. Toss the vegetables gently and brush them with the remaining glaze.
  9. Return the pan to the oven and roast for another 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  10. Remove from the oven and let rest for 5 minutes before serving.

Notes

Do not overcrowd the pan to ensure the chicken skin gets crispy and vegetables roast rather than steam. Cut vegetables into uniform sizes for even cooking. If the glaze burns, tent the pan with foil during the final roast. For extra crispiness, broil for the last 1-2 minutes, watching closely.
