  • 1 large egg, lightly beaten

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare peaches by blanching in boiling water for 30 seconds, transferring to ice water, and slipping off skins. Slice into quarter-inch wedges.
  3. In a large bowl, toss sliced peaches with sugar, lemon juice, cinnamon, vanilla, and cornstarch until evenly coated.
  4. Pour the peach mixture into a 9×13 inch baking dish and spread evenly.
  5. In a separate large bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Cut cold cubed butter into the flour mixture using a pastry cutter or fingers until it resembles coarse crumbs with pea-sized butter pieces.
  7. In a small bowl, whisk the egg and buttermilk together.
  8. Pour the liquid mixture into the flour-butter mixture and stir gently just until the dough comes together. Do not overmix.
  9. Scoop large dollops of biscuit dough over the peach filling, leaving gaps between them.
  10. Bake for 45-50 minutes until the top is golden brown and juices are bubbling vigorously.
  11. Let cool for at least 15 minutes before serving to allow filling to set.
