  • 2 large eggs, room temperature
  • ¾ cup (180ml) whole milk, room temperature

  • 2 tbsp cornstarch
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 34 cups (360-480g) powdered sugar, sifted (for frosting)
  • 23 tbsp heavy cream (for frosting)
  • 12 tsp vanilla extract (for frosting)
  • ¼ tsp salt (for frosting)
  • Black icing or edible marker (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy. Scrape down sides.
  4. Add eggs one at a time, beating well after each addition. Add 1 tsp vanilla extract.
  5. Reduce mixer to low speed. Add flour mixture in three parts, alternating with milk in two parts. Start and end with flour. Mix only until streaks disappear.
  6. Divide batter evenly among 12 liners, filling them about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. While cakes cool, beat 1 cup butter until creamy. Add powdered sugar one cup at a time, then add 1-2 tsp vanilla, ¼ tsp salt, and heavy cream. Beat on high for 2-3 minutes until fluffy.
  9. Pipe a dome of frosting onto each cooled cupcake. Use a spatula or finger to drag frosting down to create draped ‘sheet’ effects.
  10. Add two small dots of black icing for eyes and a tiny mouth if desired.

Notes

Ensure butter is softened but not melted for the best texture. Room temperature ingredients are crucial to prevent the batter from curdling. Do not overmix the batter to avoid a dense cake. Cupcakes must be completely cool before frosting to prevent the buttercream from melting. For gluten-free, use a 1:1 gluten-free flour blend with xanthan gum. For dairy-free, use vegan butter and almond milk.
