  • 1/2 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon flaky sea salt (e.g., Maldon)
  • 2 tablespoons balsamic glaze (optional)
  • 810 wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Preheat grill to medium-high heat (around 400°F/200°C) and ensure grates are clean.
  3. Wash peaches, slice in half, remove pits, and cut into 1/2 inch thick wedges.
  4. Thread peach wedges and basil leaves onto skewers, alternating between fruit and herbs.
  5. Lightly brush the peach skewers with olive oil.
  6. Grill skewers for 2-3 minutes per side until grill marks appear and peaches soften slightly but hold shape.
  7. Remove peaches from grill and let rest for a minute.
  8. Drain excess liquid from burrata and tear into 2-3 inch rustic chunks.
  9. Thread burrata chunks onto the grilled peach skewers, alternating with peaches.
  10. Drizzle with honey and balsamic glaze, then sprinkle with flaky sea salt.
  11. Serve immediately while peaches are warm and cheese is cool.

Ensure peaches are ripe but firm to prevent falling through grill grates. Handle burrata gently as it is delicate. Do not store assembled skewers; keep peaches and cheese separate until serving to maintain texture. For dairy-free option, substitute burrata with coconut cream or vegan mozzarella.
