  • 2 tablespoons raw honey
  • 1 teaspoon lemon juice
  • 1/2 teaspoon citric acid (optional, for sour flavor)

Instructions

  1. In a small saucepan over medium-low heat, combine elderberry syrup and fruit juice. Heat for 2-3 minutes until warm but not boiling.
  2. Remove from heat and stir in honey and lemon juice. Add citric acid if using. Whisk until honey is completely dissolved.
  3. Sprinkle unflavored gelatin over the warm liquid and let it bloom for 1-2 minutes.
  4. Whisk vigorously for 30-60 seconds until the mixture is smooth and free of lumps.
