  • 2 tablespoons tomato paste
  • 1 cup beef broth or bone broth
  • 2 teaspoons smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sliced avocado (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Finely chop the onion, mince the garlic, and dice the bell peppers.
  2. Heat a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat.
  3. In the same skillet, add a splash of oil if needed. Add onion, garlic, and diced bell peppers. Cook until softened and fragrant, about 5 minutes.
  4. Transfer the browned beef and sautéed veggies into the slow cooker. Add crushed tomatoes, tomato paste, and beef broth. Stir in smoked paprika, chili powder, cumin, oregano, cayenne (if using), salt, and pepper.
  5. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. About 15 minutes before serving, taste and adjust seasoning if needed.
  7. Ladle chili into bowls and garnish with fresh cilantro, sliced avocado, and lime wedges.
