  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 (15-ounce) cans kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (28-ounce) can diced tomatoes or crushed tomatoes with juice
  • 1 (6-ounce) can tomato paste
  • 1 (32-ounce) carton low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Olive oil or cooking spray (for sautéing)

Instructions

  1. Heat a large Dutch oven or stockpot over medium-high heat. Add a splash of olive oil or cooking spray.
  2. Add the lean ground turkey, breaking it up with a wooden spoon. Cook until no pink remains, about 5 to 7 minutes. Drain any excess liquid if necessary.
  3. Reduce heat to medium. Add the diced onion and sauté for about 3 minutes until softened. Add the minced garlic and cook for 30 seconds more.
  4. Stir in the tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 2 minutes, stirring constantly, to bloom the spices.
  5. Pour in the diced tomatoes with juice, chicken broth, and drained beans. Scrape up any browned bits from the bottom of the pot.
  6. Bring the chili to a boil, then reduce heat to low. Cover with a lid slightly ajar and simmer for 20 to 25 minutes until thickened.
  7. Taste and adjust seasoning with more salt or pepper if needed. Remove from heat and let cool for 10-15 minutes before portioning into containers.

Notes

This chili tastes better after sitting in the fridge for a day or two. It can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. If using ground beef, drain excess grease. For a vegetarian version, swap turkey for extra beans or lentils.
