A quick and flavorful weeknight dinner featuring bone-in, skin-on chicken thighs glazed with a homemade sauce made from fresh or canned peaches, bourbon, and spices. The result is sticky, tender, and deeply satisfying comfort food.

  • Neutral oil (avocado or vegetable) for searing
  • Salt and black pepper
  • Fresh ripe peaches, peeled and sliced (or canned peach halves in juice)
  • Bourbon (e.g., Maker’s Mark or Buffalo Trace)
  • Apple cider vinegar (2 tablespoons)
  • Worcestershire sauce (1 tablespoon)
  • Hot sauce (e.g., Frank’s RedHot, 1 teaspoon)
  • Garlic, minced (2 cloves)
  • Smoked paprika (1 teaspoon)
  • Brown sugar (2 tablespoons, optional)

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and black pepper.
  2. In a medium saucepan over medium heat, add a little oil and sauté minced garlic and smoked paprika for 30 seconds until fragrant.
  3. Add sliced peaches, bourbon, apple cider vinegar, Worcestershire sauce, hot sauce, and brown sugar. Stir to combine and bring to a simmer.
  4. Cook the sauce for 5 minutes until peaches soften, then remove from heat and puree until smooth using an immersion blender or countertop blender.
  5. Heat a large skillet over medium-high heat with neutral oil. Place chicken thighs skin-side down and sear for 6-7 minutes until golden brown.
  6. Flip chicken and cook for another 3-4 minutes.
  7. Pour half of the sauce into the pan with the chicken. Reduce heat to medium-low and simmer for 3-4 minutes, spooning sauce over chicken, until internal temperature reaches 165°F (74°C).
  8. Transfer chicken to a plate. Increase heat to medium and reduce the remaining sauce for 2 minutes until thickened.
  9. Return chicken to the pan, brush with reduced sauce, and serve immediately.

Notes

For crispy skin, ensure chicken is completely dry before seasoning. If using canned peaches, drain well. To make alcohol-free, swap bourbon for extra apple cider vinegar and vanilla extract. For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp cold water and stir into simmering sauce. Chicken thighs are preferred over breasts to prevent dryness.
