  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 cup whole milk
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp butter, melted (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • Splash of milk or cream (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Thoroughly grease a 12-cup Bundt pan with butter or non-stick spray, dust with flour, and tap out excess.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract and scrape down bowl sides.
  5. Add dry ingredients to the butter mixture in three parts, alternating with milk. Start and end with dry ingredients. Mix on low speed just until combined.
  6. Gently fold diced apples into the batter using a rubber spatula.
  7. Pour batter into prepared Bundt pan and smooth top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cake cool in pan for 15 minutes, then invert onto a wire rack to cool completely.
  9. While cake cools, make glaze: Melt 2 tbsp butter with 2 tbsp brown sugar in a small saucepan. Stir in powdered sugar and enough milk to reach a drizzling consistency.
  10. Pour glaze over the completely cooled cake.

Notes

Ensure apples are cut uniformly for even cooking. Do not overmix the batter to avoid a dense texture. Let the cake cool completely before glazing to prevent the glaze from soaking in. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, substitute butter with plant-based butter and milk with almond milk.
