These easy, 5-ingredient style muffins combine rich chocolate with hidden zucchini for a moist, tender treat that is perfect for breakfast or a snack.

  • 2 medium zucchini (about 1 ½ cups grated)
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. Wash and grate the zucchini into fine shreds. If the zucchini is very wet, squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  3. In a large bowl, whisk together the melted butter, sugar, eggs, and vanilla extract until smooth and slightly glossy.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Pour the dry ingredients into the wet ingredients and gently fold together with a spatula until just combined. Do not overmix.
  6. Gently fold in the grated zucchini and chocolate chips.
  7. Divide the batter evenly among the 12 muffin cups, filling them about ¾ full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to ensure tender muffins. If using frozen zucchini, thaw and squeeze out all excess liquid. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, swap butter for coconut oil.
