A quick, 5-ingredient emergency dessert that is dense, moist, and surprisingly healthy thanks to the addition of Greek yogurt. Perfect for busy weeknights or meal prep.

  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger, pinch of cloves)
  • 1 cup pumpkin puree (100% pure, not pie filling)
  • 1/2 cup plain, full-fat Greek yogurt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tbsp vegetable oil (or melted coconut oil)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and pumpkin pie spice until no lumps remain.
  3. In a separate large bowl, whisk pumpkin puree, Greek yogurt, sugar, eggs, and vegetable oil until smooth.
  4. Pour dry ingredients into wet ingredients. Gently fold together with a spatula until just combined; do not overmix.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until the top is golden and a toothpick inserted in the center comes out clean or with moist crumbs. Cover loosely with foil if browning too quickly after 30 minutes.
  7. Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid a dense texture. Ensure baking soda is fresh for proper rising. If pumpkin puree is watery, drain it before mixing. For gluten-free, use a 1-to-1 gluten-free flour blend. For vegan, swap eggs for a flax egg and use maple syrup and coconut yogurt.
