A reliable, incredibly moist vanilla cake with a light, creamy sprinkle frosting. This easy homemade recipe uses buttermilk and sour cream for a tender crumb and is perfect for birthdays or any celebration.

  • 3 cups (375g) All-Purpose Flour
  • 1 ½ cups (300g) Granulated Sugar
  • 1 cup (225g) Unsalted Butter, softened
  • 4 large Eggs, room temperature
  • 1 ½ cups (360ml) Buttermilk
  • ½ cup (120g) Sour Cream
  • 2 tsp Vanilla Extract or Vanilla Bean Paste
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Salt
  • ½ cup (120ml) Heavy Cream
  • 3 cups (360g) Confectioners’ Sugar
  • ½ cup Jimmies Sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, beat softened butter and granulated sugar on medium-high speed for 4-5 minutes until pale and fluffy. Scrape down sides.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract or paste.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. With mixer on low, alternate adding dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients. Mix just until combined. Fold in sour cream gently.
  6. Divide batter evenly between prepared pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  9. While cakes cool, whip heavy cream until stiff peaks form.
  10. In another bowl, beat softened butter until smooth. Gradually add confectioners’ sugar and vanilla. Fold in whipped cream gently.
  11. Stir sprinkles into the frosting.
  12. Place one cake layer on a stand. Spread a generous layer of frosting on top. Add second layer. Frost top and sides. Decorate with extra sprinkles.

Notes

Ensure all ingredients are at room temperature for proper emulsion. Do not overmix the batter after adding flour to avoid a tough cake. Use ‘jimmies’ sprinkles to prevent color bleeding. For a dairy-free version, substitute butter with plant-based alternatives and sour cream with coconut milk yogurt.
