Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Melt butter in a medium saucepan over medium heat. Stir constantly until the foam subsides, the color turns amber, and it smells nutty (about 5-7 minutes). Immediately pour into a heatproof bowl and let cool for 10 minutes.
  3. In a large mixing bowl, whisk mashed bananas until smooth. Add the cooled browned butter, eggs, and vanilla extract. Whisk vigorously until uniform and slightly frothy.
  4. Add sugar, flour, baking soda, baking powder, salt, and cinnamon to the wet mixture. Stir with a spatula just until no dry streaks remain. Do not overmix.
  5. Fold in optional add-ins like nuts or chocolate chips.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes. If the top browns too quickly, tent with aluminum foil. The bread is done when a toothpick inserted in the center comes out with moist crumbs and the internal temperature reaches 200-205°F.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Use very ripe, black-spotted bananas for maximum sweetness and flavor. Do not overmix the batter to avoid a tough texture. Browned butter can be substituted with melted butter, but the nutty flavor will be less pronounced. For gluten-free, use a 1:1 gluten-free flour blend.
