Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together 2 cups (240g) all-purpose flour, 2 teaspoons baking powder, 2 tablespoons granulated sugar, and 1/2 teaspoon salt. (5 minutes)
  2. Combine Wet Ingredients: In a separate bowl, beat 2 large eggs until frothy, then whisk in 1 1/2 cups (360ml) milk, 4 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract. (5 minutes)
  3. Make the Batter: Pour wet ingredients into dry, gently folding with a spatula until just combined. Let rest for 5-10 minutes while you prep toppings. (10 minutes)
  4. Preheat Skillet or Griddle: Warm over medium heat and lightly grease with butter. (5 minutes)
  5. Cook Pancakes: Pour 1/4 cup (60ml) batter per pancake onto skillet. Cook 2-3 minutes until bubbles form and edges look set, then flip and cook 1-2 minutes more until golden brown. Stack pancakes on a warm plate, cover loosely with foil. (15-20 minutes)
  6. Assemble the Board: Arrange pancakes, fresh berries, sliced bananas, cheeses, nuts, and pastries on your serving board. Add small bowls of maple syrup, honey, and whipped cream. Garnish with fresh herbs. (10 minutes)
  7. Set Up Mimosa Bar: Chill sparkling wine and juices. Pour orange juice and other juice options into pitchers. Place garnishes like fruit slices and herbs in small bowls. Fill glasses halfway with sparkling wine and top with juice as desired. (5 minutes)
  8. Serve and Enjoy: Invite everyone to build their own plates and mimosas.

Notes

For fluffier pancakes, separate egg whites and whip to soft peaks before folding into batter. Keep cooked pancakes warm in a 200°F (95°C) oven covered loosely with foil. Use gluten-free flour or dairy-free butter substitutes as needed. Avoid overcrowding the board for best presentation.
