Ingredients

  • Low-moisture mozzarella balls (small, 1-2 inches)
  • Black olives (sliced thin for eyes)
  • Maraschino cherries or red pepper bits (for mouths)
  • Pepper Jack cheese (block form, cubed or sliced)
  • Sharp cheddar cheese (cubed)
  • Saltine crackers or water crackers
  • Pretzel rods or twists
  • Apples or pears (thinly sliced)
  • Grapes (red or green)
  • Candied pecans or walnuts

Instructions

  1. Let mozzarella balls sit at room temperature for 10-15 minutes to become pliable.
  2. Roll small pieces of mozzarella into smooth balls, flatten the bottom slightly, and press thin olive strips into the top half for eyes.
  3. Add a mouth using a tiny piece of red pepper, cherry, or cream cheese, then refrigerate ghosts until ready to serve.
  4. Slice Pepper Jack and cheddar cheeses into cubes or slices and arrange them on the board as the base.
  5. Place crackers and pretzels on the board, leaning pretzel rods against cheese for height.
  6. Fan out sliced apples and pears near the cheese and add grape clusters.
  7. Place chilled cheese ghosts strategically on the board, tucking them into corners or on pretzels for a floating effect.
  8. Sprinkle candied nuts in empty spaces to fill gaps and add crunch.
  9. Garnish with fresh herbs if desired, wipe the rim, and serve immediately.

Notes

Let cheeses sit at room temperature for 30 minutes before serving to enhance flavor. Use toothpicks to secure olive eyes if needed, but remove before serving. For a gluten-free option, use rice crackers or gluten-free pretzels. The board is best served fresh.
