A simple, smoky, and tangy green salsa made with roasted Hatch chiles, tomatillos, and fresh cilantro. This easy 5-ingredient recipe delivers bold flavor perfect for tacos, chips, or eggs.

  • 68 medium Hatch chiles
  • 1 lb tomatillos, husked and washed
  • 1/2 medium white onion, quartered
  • 2 large garlic cloves, peeled
  • 1/2 cup fresh cilantro, packed (stems and leaves)
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt, or to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Remove husks from tomatillos, rinse thoroughly to remove sticky residue, and pat dry. Place on the prepared baking sheet.
  3. Add whole Hatch chiles and quartered white onion to the baking sheet. Drizzle with vegetable oil and toss to coat.
  4. Roast for 20-25 minutes, turning peppers halfway through, until tomatillos are golden brown and soft, and chiles are heavily blistered and charred.
  5. Transfer hot chiles to a large bowl, cover tightly with plastic wrap or a plate, and let steam for 10 minutes to loosen skins.
  6. Peel charred skins off the Hatch chiles using fingers or a paper towel. Remove stems and discard. Leave seeds for extra heat or remove for milder salsa.
  7. Add peeled chiles, roasted tomatillos, roasted onion, garlic cloves, and cilantro to a blender. Add lime juice and salt.
  8. Blend on high until smooth, scraping down sides as needed. Taste and adjust seasoning with more salt or lime juice.
  9. Transfer salsa to a jar, let cool to room temperature, then refrigerate for at least one hour before serving.

Notes

Steaming the peppers after roasting is crucial for easy peeling. For a milder salsa, remove seeds and membranes from the chiles. The salsa tastes better after sitting in the fridge for a few hours to let flavors meld. Can be stored in the fridge for up to 5 days or frozen for up to 3 months.
