A simple, healthy, and delicious weeknight dinner featuring salmon fillets baked with lemon, herbs, and garlic on a single sheet pan.

  • 1.5 to 2 pounds center-cut salmon fillets
  • 2 lemons (one for juice, one for zest)
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a large 13×18 inch rimmed baking sheet with parchment paper and lightly brush with olive oil.
  3. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
  4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, and red pepper flakes.
  5. Place salmon on the prepared pan and pour the herb-lemon mixture over the fillets, basting to coat evenly.
  6. Bake for 12-15 minutes, or until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove from oven and let rest for 2-3 minutes before serving.

Notes

Pat the salmon dry before seasoning to ensure proper baking rather than steaming. Do not overcrowd the pan; cook in batches if necessary. Salmon continues to cook after removal from the oven, so pull it when it is just barely done for a moister result. For a dairy-free version, substitute butter with additional olive oil.
